- 250 g Carrot
- - Toned Milk
- 100 g Almonds
- 100 Ml Gowardhan Ghee
- 500 g Sugar
- 1 Gms Kashmiri Mongra Saffron
- Loose Cardamom
Instructions
- 1. Preheat your oven to 180°C (356°F) to ensure it is ready when the mixture is prepared.
- 2. Grate 250g of carrots finely and keep them aside.
- 3. Heat a pan on medium heat and add 200ml of ghee.
- 4. Add the grated carrots to the pan and sauté them until they become soft and aromatic.
- 5. Once the carrots are soft, add 500g of sugar to the pan and mix well until the sugar dissolves.
- 6. Pour in 200ml of milk and let the mixture simmer, stirring occasionally, until it thickens to a halwa-like consistency.
- 7. Add 20g of cardamom powder and 0.25g of saffron strands to the mixture for aroma and flavor. Mix well.
- 8. Crush 100g of almonds and 100g of cashews, and add them to the mixture for a nutty texture. Stir to combine evenly.
- 9. Grease a cake tin with ghee or line it with parchment paper.
- 10. Transfer the prepared carrot mixture into the greased cake tin, spreading it evenly.
- 11. Place the cake tin in the preheated oven and bake for 35-40 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean.
