Ingredients

  • 1 kg Basmati Rice
  • 1 l Homogenised Toned Milk
  • 100 g Almonds
  • 750 g Pistachios
  • 100 g Raisins
  • - Green Cardamom Powder
  • 500 g Sugar

Instructions

  1. 1. Rinse 1/4 cup of basmati rice thoroughly under running water until the water runs clear. Soak the rice in water for 20 minutes and drain.
  2. 2. In a heavy-bottomed pan, bring 1 liter of full-fat milk to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
  3. 3. Once the milk comes to a boil, reduce the heat to low and add the soaked and drained rice. Stir well to ensure the rice does not stick to the bottom.
  4. 4. Cook the rice in the milk on low heat, stirring frequently, until the rice is soft and the milk thickens. This should take about 25-30 minutes.
  5. 5. Add 1/4 cup of sugar to the kheer and stir until the sugar dissolves completely. Adjust the sweetness to your taste.
  6. 6. Add 1/4 tsp of cardamom powder and mix well. Continue to simmer for another 5 minutes to allow the flavors to blend.
  7. 7. Turn off the heat and add 2 tbsp of chopped nuts (like almonds, cashews, and pistachios) and 1 tbsp of raisins. Stir well.
  8. 8. Serve the kheer warm or chilled, garnished with additional nuts if desired.
