Steps to make the Batata Vada:
Crush 4-5 cloves of garlic and 2-3 green chilies in a hand pastel or mixer jar.

Take a pan. Heat 2-3 tablespoons of oil. After heating the oil, add 1 teaspoon for mustard seed and let it crackle, Add Asafoetida.

Add the Crushed Garlic and Green chili paste to this and cook for a while. A nice Garlicy aroma can be smelt at this stage.

When the garlic is just about to turn light golden, turn off the flame and add in half a teaspoon of turmeric powder and a handful of freshly cut coriander leaves.

Boil peel and mash the potatoes and add them to the mixture. Add salt as per taste and give the mixture a good mix. Allow the mixture to cool while we prepare the batter for the Vada.

Take 2 cups of Gram Flour in a bowl. Add salt as per taste and uncrumple the Gram Flour with your hands so that no lumps are left, Gently add water to this to form a nice batter of flowing consistency. The batter should not be watery but should be able to coat the potato well. Let the batter rest for 2-3 minutes.

Make nice lemon size balls of the potato mixture which are now cooled down. Keep all the potato balls ready. Meanwhile, heat the oil. When the oil is sufficiently heated, Dip the potato balls in the gram flour batter and coat them well.

Fry these nicely coated potato balls on a medium flame till nice crisp and brown. Take these fried potato dumplings in tissue paper.

To Make the Chutney:
Sprinkle the remaining Gram flour batter with hands in the hot oil and fry them till they turn crisp and golden.

In a mixer Jar, add the remaining 4-5 cloves of garlic,1 teaspoon of red chili powder, and the gram flour fritters once they cool down.

Add salt to taste (remember the gram Flour batter has some salt already added to it), and grind the contents to a coarse chutney

To Assemble the Vada Pav:
Take a pav, slice it in between from one end. Add a layer of Chutney Prepared.

Place the Batata Vada (Potato Fritter) prepared and close the pav. Similarly, assemble all the Vada Pavs. Serve it Hot with Green Chilli and Tomato Ketchup.
