Take a cooking pot , add ½ cup of white grain rice and add ½ cup of water in the ratio 1:1 and let it cook for 10-15 minutes until it comes to a boil.

Cook the rice on a medium flame and while cooking cover it with a lid so that it becomes soft very easily.

On the other side take another bowl and add 1 tablespoon of rice vinegar, 1 teaspoon of caster sugar, ½ teaspoon of salt. Whisk it so that the sugar and salt is dissolved nicely in the vinegar.

Meanwhile all the water is been soaked by the rice so turn off the flame and let it rest for 10 minutes. Add all the cooked rice to the vinegar solution in the bowl with the help of a spatula.

Mix the rice nicely with the vinegar solution and after that take a bowl and transfer all the rice mixture into it . Spread the rice so that it forms a thin flat layer.

Take 1 halved nori sheet(seaweed) and place it on a sushi mat(bamboo sushi mat) and add the rice mixture on the rough side of the nori sheet and spread it evenly all over with the help of a spoon.

Once the rice is added, start adding the vegetables which is chopped in rectangular size.

Vegetables include mainly carrots, cucumber, avocado, romaine lettuce leaves which are chopped in the same size.

After that roll the seaweed sheet along with the bamboo mat and while rolling make sure that the vegetables don’t spill out. With the help of bamboo mat itself press the seaweed sheet gently backwards so that all are in a good shape.

After that remove the bamboo mat and the rolled sushi is ready and cut it into pieces.

Serve the prepared sushi with some pickled ginger, 1 teaspoon of wasabi paste and 3 tablespoon of soya sauce and enjoy it with everyone.
