Firstly wash the urad dal 4-5 times nicely and then transfer it to a bowl.

Add 2 glass of water and cover it and let it rest overnight around 8-10 hours.

Once the urad dal is soaked, strain the water and wash it again with clean water.

Transfer some of the urad dal to a mixer and grind it as we don’t have to grind all the dal at the same time. Don’t use water while grinding or if you are using it then add only 1 tablespoon.

Once all the dal is grinded well then transfer the batter to a bowl and whisk it well for few minutes to make it soft.

Add 2 tablespoon rice flour, 1 tablespoon grated ginger, 3 green chillies, 1 tablespoon cumin(jeera), 1 teaspoon asafoetida(hing), 1 teaspoon black pepper powder , salt as per the taste and add 5-6 curry leaves in the batter.

Mix it well and add 2 tablespoon hot oil and then mix it again well.

For forming medu vada from the batter, firstly apply some water on palm and finger on both of the hands and roll the mixture from one hand to other and make a hole in the centre by pressing it with a finger.

Do the same process for the whole batter.

Take a pan and heat some oil to fry the medu vada and once the oil is hot gradually fry the medu vada one by one very carefully.

Fry them on a slow flame to make them crispy and flip them occasionally and fry it until it is golden brown.

Once the vada’s are fried take it out on a tissue paper so that the excessive oil is removed.

Yummy tasty medu vada are ready. Serve it hot with coconut chutney and sambhar.
