Place 2 cups of flattened rice/ poha in a mixing bowl. Wash and rinse it thoroughly with water. Do not apply too much pressure with hands.

After washing the flattened rice/ poha, season with salt to taste, a pinch of sugar, and the juice of half a lemon. Rest the poha for 5-10 minutes after gently mixing with light hands.

Dry roast one-half cup of peanuts. Place them in a bowl.

Heat some oil in a pan. Add some mustard seeds and crackle them. Next, add the cubed potatoes and cook until they are half cooked.

When the potatoes are half done, add a spring of curry leaves, 1 finely chopped onion, ½ teaspoon of sugar, and gently sauté all the ingredients.

Once the potatoes are almost done, add half a teaspoon of turmeric powder. Mix it thoroughly.

Add the soaked flattened rice/ poha. Squeeze in the juice of a remaining half lemon. And the roasted groundnuts. Add some salt to taste.

Thoroughly combine all of the ingredients. Cook the flattened rice/ poha for 2-3 minutes. If you feel the flattened rice/ poha is dry, add a few drops of water to it. Mix it thoroughly.

Turn off the heat and leave the flattened rice/ poha covered with a lid for 3-4 minutes. Garnish the flattened rice/ poha by adding finely chopped fresh coriander leaves. Steaming hot flattened rice/ poha is ready to serve.
