Wash and grate the Carrots.

Take a cooking pan, add ¼ cup of clarified butter, add the grated carrots and coat the carrots with the clarified butter. Saute for 2-3 minutes.

Add 2 litres of Full Cream milk and cook the carrots in milk. Keep cooking the carrots in the milk.

When the carrots are cooked, add sugar (approximately 1 cup) Keep simmering this mixture, till it thickens well. Gajar Halwa is ready.

Take the halwa in a bowl and cool it to room temperature.

Steps to Prepare Cake :
For the Cake : In a mixing bowl add ¼ cup of semolina, ¼ cup of powdered sugar, a levelled teaspoon of baking powder, ½ teaspoon of baking soda, and 1 ½ cups of refined flour.

Add a pinch of cardamom powder and give all these dry ingredients a good mix

Add 3 tablespoons of butter and 3 tablespoons of oil and mix the ingredients well.

In a heavy-bottomed pan or cooker add 2 cups of cooking salt. Let the pan heat. You can add whole spices as it will release its flavour and infuse the cake.

Add ¾ cup of carrot halwa to the cake mixture. Add in a few chopped pistachios. Add 1/3 cup of condensed milk and mix it.

Add 2 tablespoons of milk and curd and mix all the ingredients well.

Take a cake mould, grease it with butter, and dust it with a fine coat of refined flour.

Fill the mould a little more than half with the cake mixture. Tap it a couple of times and place it in the hot cooker.

Keep the flame on medium, cover it, and bake it. Insert a knife to check if the cake is done. De mould the cake and serve it.
