Take 2-3 boiled potatoes in a bowl and grate them nicely. Add 3-4 tablespoons of fresh bread crumbs and add 2 tablespoons of refined flour in it for binding.

Add salt as per the taste and add 1 tablespoon of chilli flakes in it, 1 teaspoon of pepper powder and 1 teaspoon of nutmeg in it and add freshly chopped basil leaves in it and add 1 bowl of corns (optional) in it.

After that mash, the mixture with your hands very firmly and knead it till becomes a firm soft dough. Roll them into small cylindrical shapes and for that wet the palms. Take a small batch of potato dough in your hands and place 2 sticks of cheese inside it and cover it nicely.

Do the same thing for all the batches of potatoes and when once done dust all the cyclinder-shaped potatoes roll with some dry flour very nicely from all sides.

After that prepare a slurry of flour with water and then dip the croquettes in the slurry first and roll it in the breadcrumbs very nicely so that it is well coated everywhere. Do this process for every croquette.

After that when all the croquettes are ready place them inside the deep freezer and freeze them for 15-20 minutes.

On the other side take a pan and add 3-4 cups of oil to the pan to fry the croquettes when the oil is heated transfer all the croquettes in the oil and cook it for 3-4 minutes till it has a golden brown colour.

When the colour is golden brown take them out of the pan on the plate having tissue paper on it so that the additional oil drips off.

Tasty, crunchy, cheesy potato croquettes are ready to eat. Serve it with tomato ketchup or any dip of your choice.
