In a mixing bowl take 1 ½ cup of refined flour and ½ cup of wheat flour. Add a pinch of salt to it, 1 teaspoon sugar, and mix well. Add ½ teaspoon of white vinegar.

Add water in small quantities and knead a semi-soft dough. The dough should be allowed to rest for almost half an hour.

Now for the stuffing, add finely chopped spring onions, a tablespoon of chopped coriander stem, 1-2 finely chopped green chilies, and a teaspoon of white pepper.

Next, add a teaspoon of soy sauce, a teaspoon of garlic paste, a teaspoon of chopped ginger, and finally 300 gms minced chicken.

Combine all the ingredients well by hand and give it a good mix.

After 30 mins knead the dough lightly and take small lemon size portions out of the dough, and roll them into small circles. You can also use a cookie cutter to get perfect circular shapes.

Fill in the stuffing at the center of the dough, and seal it well. Shape the momos to your liking into a suitable shape.

Heat some water in a steamer. Place some cabbage leaves on the steamer plates drizzle little oil on top of it. keep the stuffed momos on them and close the lid once the steam forms.

Steam them well for 10 minutes and your steaming hot momos are ready to serve for souce

In another pan, heat some water and 2-3 chopped tomatoes and 2-3 dried red chilies. Cook the tomatoes till they are soft.

Meanwhile, in another pan dry roast a handful of peanuts, add a teaspoon of coriander seeds to it and add 2-3 garlic cloves as well.

In a blender jar add all the above ingredients. Add salt to taste and grind them to a fine paste. The sauce is ready to serve with momos.
