A flavorful Indian-inspired baked grouper dish, infused with aromatic spices and served with a tangy tomato-based sauce. Perfect for a satisfying dinner.
Ingredients
- 10 g Fresh Thyme
- 100 g Sambar Onion Peeled
- 250 g Organically Grown Green Capsicum
- 400 g Pastazara Finely Chopped Tomatoes
- 200 g Ginger (Shunti)
- 5 ltr Saffola Sunflower And Rice Bran Blended Cooking Oil - Free 1 L Pouch
- 50 g Zoff Premium Indian Bay Leaf
- 1 kg Simply Staples Mineral Rich Sea Salt
Instructions
- 1. Preheat the oven to 180°C (350°F).
- 2. Place the grouper in a flat casserole dish and set aside.
- 3. Heat 1/4 cup cooking oil in a pan over medium heat. Add 1 finely chopped onion and 1/4 cup diced green pepper, sauté until softened.
- 4. Add 2 lb chopped tomatoes, 1/2 cup ginger preserve, 1 tsp salt, 1/4 tsp thyme, and 1 bay leaf to the pan. Stir well and bring the mixture to a boil.
- 5. Spoon the tomato and spice mixture evenly over the grouper in the casserole dish.
- 6. Bake the dish in the preheated oven for 30 minutes or until the fish is cooked through and flakes easily with a fork. Avoid overcooking.
- 7. Remove the bay leaf before serving. Serve hot with steamed rice or Indian flatbread.
