Ingredients
- 400g Baby Roma Tomatoes
- 250 G Sova Leaves/Dill Leaves(250 Gm)
- 1 Kg Small Indian Salmon
- - Shallots
- 250 G Beans (250Gm)
- - Lemon Juice 250ml
- 250g Asparagus
- 250 ml Olive Oil
- 52 g Paprika Powder
Instructions
- 1. Instead of a screaming hot pan which can oxidize the delicate Omega-3 oils, start the salmon in a luke-warm pan with the skin side down.
- 2. While the salmon cooks, toss your diced tomatoes, fresh dill, lemon juice, zest, and minced shallots in a small bowl.
- 3. Whisk the 1 tsp of Olive oil into the tomato juices left at the bottom of your relish bowl. This creates a light, unheated vinaigrette that carries the fat-soluble vitamins (A, D, E, K) from the meal.
- 4. Plate the salmon over your greens and spoon the Tomato-Dill Relish directly over the warm fish. The residual heat from the salmon will slightly "bloom" the aroma of the dill.
- 5. And the Salmon is ready to be served.
