Ingredients

  • 1 liter Sunflower Oil
  • 500 g Onion
  • - Frozen Peas
  • 250 g Carrot
  • 100 g Tamarind Paste
  • - Red Chilli Powder
  • 50g Everest Garam Masala
  • 100 g Salt
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 500 g Tomato - Hybrid
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Cut the idlis into quarters and set aside to prepare them for sautéing.
  2. 2. Heat oil in a pan over medium heat and add mustard seeds. Once they start spluttering, add curry leaves and sauté for 30 seconds.
  3. 3. Add the chopped onions and sauté until golden brown, followed by the tomatoes. Cook until the tomatoes soften and blend well with the onions.
  4. 4. Mix in the peas and grated carrots, cooking for 3-4 minutes until the vegetables are tender.
  5. 5. Add turmeric powder, red chili powder, garam masala, and salt. Stir well to combine, ensuring the spices coat the vegetables evenly.
  6. 6. Add tamarind paste and a splash of water to create a tangy masala sauce. Cook for 2-3 minutes until the sauce thickens slightly.
  7. 7. Gently toss the idli pieces in the masala sauce, ensuring they are evenly coated. Cook on low heat for 3-4 minutes to allow the flavors to meld.
