A robust and flavorful vegetarian chili made with three types of beans, fresh vegetables, and aromatic spices. Perfect for a cozy dinner, this dish is both hearty and satisfying.
Ingredients
- 190 g The Gourmet Jar Fresh Tomato Salsa
- 100 g Garlic - Single Clove
- 120 g Avocado - Tanzania
- 2.5 Kg Austin Whole Peeled Tomato
- 500 g Organically Grown White Onion
- 250 ml Olive Oil
- 1 kg Rice
- 50 g Sakthi Curry Powder
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
Instructions
- 1. Drain and rinse the canned tomatoes and red beans, and set them aside.
- 2. Finely chop the white onion and garlic.
- 3. Heat a large skillet over medium heat, add a splash of olive oil, and sauté the chopped white onion and garlic for 3-4 minutes until softened and fragrant.
- 4. Transfer the sautéed onion and garlic to a crockpot. Add the drained tomatoes, red beans, salsa, curry powder, salt, and pepper. Stir well to combine.
- 5. Set the crockpot to high and cook for 2 hours, stirring occasionally to ensure even cooking.
- 6. For enhanced flavor, reduce the heat to low and cook for an additional 2 hours if desired.
- 7. Serve the chili over cooked rice, garnished with sliced avocado.
