Instructions
- 1. Heat a large pot or Dutch oven over medium heat and add the olive oil. Once hot, add the ground beef and cook for 5-7 minutes, breaking it up with a wooden spoon, until browned and fully cooked. Drain any excess fat and set the beef aside.
- 2. In the same pot, add the chopped onion, garlic, carrots, and celery. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
- 3. Add the tomato paste to the pot and stir for 1-2 minutes to combine and enhance the flavor.
- 4. Pour in the beef stock and water, then add the diced tomatoes (with their juices), dried thyme, and bay leaf. Stir to combine and bring the mixture to a gentle boil.
- 5. Once boiling, reduce the heat to a simmer and return the cooked ground beef to the pot. Cover and let the soup simmer for 15 minutes, allowing the flavors to meld.
- 6. After 15 minutes, add the egg noodles to the soup and cook uncovered for 6-8 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.
- 7. Season the soup with salt and black pepper to taste. Remove the bay leaf before serving.
- 8. Ladle the soup into bowls, garnish with freshly chopped parsley, and serve hot with crusty bread on the side if desired.
