Take a deep bottomed cauldron and add2 litres of cow milk and boil it till one boil and after that take 2 tablespoons of vinegar and add 4 tablespoons of water in it.

Add the vinegar-water mixture to the boiling milk to split the milk and mix it properly and after that when the milk starts to split then mix it once and switch off the flame of the gas and some cold water in it to lower the heat temperature.

Once when the heat temperature is lowered then take a vessel and strain out the water from split milk with the help of a cloth and then squeeze the cloth to strain out the remaining water.

After that put all the paneer in the plate and add 2 tablespoons of fine sugar, 2 teaspoons of corn starch and then mash it completely with the hands.

Continue mashing the paneer with the hands till it becomes smooth and after that add it to the cauldron on the stove and cook it till the sugar in it is mixed properly and continue to stir it so that it does not stick to the surface.

When once done transfer it again to the plate and then let it rest for some time and after that when it is cooled then again mash it with hands thoroughly to make it smooth and of silky texture.

Add 2 teaspoons of cardamom powder and mix it well and with the help of mould or with hands start giving the shapes to Sandesh and put it in a plate.

Sweet, amazing, soft Sandesh is ready to eat. Garnish with kesar water and enjoy the delicacy.
