Take a bowl and soak the raw rice in it by adding some water for about 15 minutes and after that add 1 ½ cup of water in the pressure cooker and cook the soaked raw rice in pressure cooker till 2 whistles to make the rice more soft and sticky.

Once it is done keep it aside and on the other side, take a deep vessel and boil the milk and stir it nicely.

When once the milk comes to a boil then add the cooked rice in it and mix it properly and stir it continuously and cook it for 10 minutes till the consistency of the milk thickens.

Add the condensed milk(optional) to the vessel for that sweet taste and stir it very nicely so that the rice does not stick to the base.

Once it is done, on the other side take 2 teaspoons of clarified butter(ghee) in one large spoon and add cashewnuts and roast it till it colour changes to golden brown and then add raisin and roast it as well on low flame.

Once the raisin plump up, turn off the flame and keep it aside.

Add the cardamom powder in the payassam which is cooking and after that add the roasted cashewnuts and raisin to it and mix it well altogether.

Rice payassam is so ready which is absolutely very tasty. Turn off the stove and serve it hot by garnishing it with some dry fruits.
