Soak the pad thai noodles in water for 10minutes. After that drain, the excess water and the Pad Thai Noodles are ready to use.

In a wok, heat some oil. When the oil is hot add a tablespoon of ginger garlic paste and a few small bruised pieces of lemongrass.

Add 1 cup of thinly sliced bell peppers and sauté it. Add ½ cup of bean sprouts, 2-3 bird’s eye chili and mix it well.

Now, add the sauces a teaspoon of red chili sauce, soy sauce, a teaspoon of tamarind paste ad ½ teaspoon of brown sugar and mix everything quickly.

Once the sugar melts, add the boiled noodles. Add a few spring onions and it’s greens. Add some salt to taste and mix it thoroughly.

Finally, add the juice of half a lemon and a handful of coarsely ground peanuts.

Pad Thai Noodles are ready to serve. Garnish with some spring onion greens and some peanuts.
