In a mixing bowl, add an egg. Add 2 tablespoons of cornflour, and 2 tablespoons of refined flour. Add a little salt.

Add a teaspoon of red chilli powder, a tablespoon of schezwan sauce, ¼ teaspoon of soy sauce and 1/2 teaspoon of vinegar or lemon juice, 1/2 teaspoon of black or white pepper powder.

Mix all these ingredients well, to form a thick batter. Do not add water.

To this batter, add 250 gms of boneless chicken and marinate it for an hour.

In the meantime, to prepare the sauce in a bowl add 1 teaspoon of schezwan sauce, a teaspoon of tomato sauce, 1/4 teaspoon of white pepper powder, and 1/2 teaspoon of soya sauce. and mix well. Add ½ teaspoon of lemon juice and mix all the contents well.

After an hour, pierce these marinated chicken pieces in a soaked skewer. You can add 5-6 pieces in a skewer. Add all the pieces in skewers and keep them ready.

Take a pan and add oil to it. Add the chicken Skewers and fry them. Flip the sides and fry both sides well till they are golden brown in colour and crisp. Once they are fried, remove them to a plate.

Heat little oil in a pan and add a tablespoon of finely chopped garlic. Fry till the garlic turns brown.

Add the sauce prepared in step 5 to the pan and cook it for a minute. Add a tablespoon of water and stir it.

Prepare a slurry of 1 tablespoon of cornflour mixed with 3 tablespoons of water and add to the above mixture. Mix it well.

When the mixture comes to a boil. Add the chicken skewers to this sauce, coat them well and cook for a couple of minutes.

Remove them to a serving plate. Drizzle the excess sauce on top of the chicken satay and garnish it with some spring onion greens.
