Marinate the boneless chicken with salt, lime juice, garlic cloves, cumin, red chilli, oregano, cooking oil and pepper for 20 minutes

Drizzle cooking oil into a pan and add the marinated chicken pieces

Fry for 7-8 minutes on high heat then remove from heat

Add bell peppers and sliced onions to the pan.

Fry for 2-3 minutes on high heat.

Add chilli flakes, oregano, cumin, salt and pepper.

Add soaked rice and mix well.

Pour chicken stock and bring to a boil

Add fresh coriander and cover with a lid to cook for 20-25 minutes on low heat

Remove lid and mix in the chicken before serving
