- Start by soaking the mung bean noodles in warm water until they soften, then drain and set them aside.
- In a large mixing bowl, combine the ground pork with thinly sliced mushrooms, grated carrots, minced garlic cloves, lime powder, and finely chopped red onion.
- Add a sprinkle of black pepper powder, crushed black pepper, and a splash of fish sauce to the mixture, then mix everything well until evenly combined.
- Pour a bit of cooking oil into a pan over medium heat and cook the pork mixture until the meat is fully cooked and slightly caramelized.
- Meanwhile, boil the eggs, peel them, and slice them into quarters.
- Lay out a spring roll wrapper and place a small amount of the pork mixture in the center, topped with softened mung bean noodles and a piece of boiled egg.
- Roll the wrapper tightly, tucking in the sides as you go to secure the filling inside.
- Heat a generous amount of cooking oil in another pan and fry the spring rolls until they are golden brown and crispy on all sides.
- Drain the spring rolls on paper towels to remove excess oil and serve them warm with additional fish sauce for dipping.
