Instructions
- 1. Prepare the batter for the crepes: In a mixing bowl, combine masa harina, turmeric powder, salt, and water. Whisk until smooth and set aside to rest for 20 minutes.
- 2. Prepare the filling: Heat cooking oil in a large pan over medium heat. Add minced garlic and thinly sliced red onion and sauté until fragrant.
- 3. Add minced pork to the pan and cook until browned. Then, add large prawns and cook until they turn pink and are fully cooked.
- 4. Season the filling with salt, ground black pepper, fish sauce, and a splash of lemon juice. Stir well and cook for another 2-3 minutes. Remove from heat and set aside.
- 5. Heat a non-stick skillet over medium heat and lightly grease it with cooking oil. Pour a ladleful of the batter into the skillet, swirling to spread it thinly and evenly.
- 6. Cook the crepe for 2-3 minutes until the edges start to crisp. Add a portion of the prepared filling onto one side of the crepe.
- 7. Fold the crepe in half to cover the filling and cook for another minute. Remove the crepe from the skillet and repeat the process with the remaining batter and filling.
