Instructions
- 1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- 2. Add 1 diced onion, 1 diced carrot, 1 diced celery stalk, 1/2 diced green pepper, and 3 diced zucchinis to the skillet. Sauté for 5-7 minutes until the vegetables are softened.
- 3. Add 1 minced garlic clove and cook for an additional 1 minute, stirring frequently.
- 4. Push the vegetables to one side of the skillet and let them continue cooking gently on low heat for 8-10 minutes, stirring occasionally to prevent sticking.
- 5. Stir the vegetables together, then add 1 can of diced tomatoes and 1 can of tomato sauce. Mix well.
- 6. Season the sauce with 1/2 teaspoon of Italian seasoning and salt to taste. Simmer the mixture for 15-20 minutes, stirring occasionally, until the flavors meld and the sauce thickens.
