Ingredients
- 400G Casa Marrazzo Peeled Organic Tomatoes, 400G
- 10Cm Guanajuato White Corn Tortillas, 10Cm
- 1.5Kg Portobello Mushrooms, 1.5Kg
- - Cathedral City Mature Cheddar Cheese
- 70G Mill & Mortar Citrus Salt Flakes, 70G
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. Dice the portobello mushrooms and tomatoes into small pieces. In a mixing bowl, combine the diced portobello mushrooms, diced tomatoes, condensed mushroom soup, and a pinch of salt. Mix well and let it sit for 15 minutes to allow the flavors to meld.
- 3. Cut the corn tortillas into triangles. Layer the bottom of a deep casserole dish with half of the tortilla triangles.
- 4. Spread half of the soup and vegetable mixture evenly over the tortilla layer. Sprinkle half of the shredded cheese on top.
- 5. Add another layer of tortilla triangles, followed by the remaining soup and vegetable mixture. Top with the remaining shredded cheese.
- 6. Bake the casserole in the preheated oven for 30 minutes, or until the cheese is melted, lightly browned, and bubbly.
- 7. Remove from the oven and let it cool for 5 minutes before serving. Enjoy your delicious vegetarian casserole!
