Ingredients

  • 400G Casa Marrazzo Peeled Organic Tomatoes, 400G
  • 10Cm Guanajuato White Corn Tortillas, 10Cm
  • 1.5Kg Portobello Mushrooms, 1.5Kg
  • - Cathedral City Mature Cheddar Cheese
  • 70G Mill & Mortar Citrus Salt Flakes, 70G

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. Dice the portobello mushrooms and tomatoes into small pieces. In a mixing bowl, combine the diced portobello mushrooms, diced tomatoes, condensed mushroom soup, and a pinch of salt. Mix well and let it sit for 15 minutes to allow the flavors to meld.
  3. 3. Cut the corn tortillas into triangles. Layer the bottom of a deep casserole dish with half of the tortilla triangles.
  4. 4. Spread half of the soup and vegetable mixture evenly over the tortilla layer. Sprinkle half of the shredded cheese on top.
  5. 5. Add another layer of tortilla triangles, followed by the remaining soup and vegetable mixture. Top with the remaining shredded cheese.
  6. 6. Bake the casserole in the preheated oven for 30 minutes, or until the cheese is melted, lightly browned, and bubbly.
