Vegetarian Cheddar-Stuffed Dinner Potatoes recipe

Ingredients

  • 1 Bunch Spring Onions 1 Bunch
  • - Cathedral City Mature Cheddar Cheese
  • 10 Pack Purely Organic Free Range Mixed Weight Eggs 10 Per Pack
  • 200G All Things Butter Unsalted Butter

Instructions

  1. 1. Preheat your oven to 400°F (200°C). Wash and dry 4 russet potatoes, then pierce them several times with a fork. Place them on a baking sheet and bake for 50-60 minutes, or until tender.
  2. 2. Once the potatoes are cool enough to handle, slice them in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin layer of potato to support the skins.
  3. 3. In the mixing bowl, combine the scooped-out potato with 3 tablespoons of butter, 1/4 cup of shredded cheddar cheese, and 3 tablespoons of chopped green onion. Mix until smooth and well combined.
  4. 4. Spoon the potato mixture back into the potato skins, dividing it evenly among the halves. Use the back of a spoon to create a small well in the center of each stuffed potato half.
  5. 5. Crack 1 egg into each well. Place the stuffed potatoes back on the baking sheet and bake at 350°F (175°C) for 15 minutes, or until the egg whites are set and the yolks are cooked to your liking.
