- 1 Bunch Spring Onions 1 Bunch
- - Cathedral City Mature Cheddar Cheese
- 10 Pack Purely Organic Free Range Mixed Weight Eggs 10 Per Pack
- 200G All Things Butter Unsalted Butter
Instructions
- 1. Preheat your oven to 400°F (200°C). Wash and dry 4 russet potatoes, then pierce them several times with a fork. Place them on a baking sheet and bake for 50-60 minutes, or until tender.
- 2. Once the potatoes are cool enough to handle, slice them in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin layer of potato to support the skins.
- 3. In the mixing bowl, combine the scooped-out potato with 3 tablespoons of butter, 1/4 cup of shredded cheddar cheese, and 3 tablespoons of chopped green onion. Mix until smooth and well combined.
- 4. Spoon the potato mixture back into the potato skins, dividing it evenly among the halves. Use the back of a spoon to create a small well in the center of each stuffed potato half.
- 5. Crack 1 egg into each well. Place the stuffed potatoes back on the baking sheet and bake at 350°F (175°C) for 15 minutes, or until the egg whites are set and the yolks are cooked to your liking.
