Instructions

  1. Prepare the vegetables: Wash and chop the red bell pepper, mushrooms, and red onion into bite-sized pieces. Set aside.
  2. Prepare the aromatics: Finely chop the green chillies, garlic, ginger, and lemongrass. Crush the coriander seeds and black peppercorns using a mortar and pestle or spice grinder. Set aside.
