Instructions
- Prepare the vegetables: Wash and chop the red bell pepper, mushrooms, and red onion into bite-sized pieces. Set aside.
- Prepare the aromatics: Finely chop the green chillies, garlic, ginger, and lemongrass. Crush the coriander seeds and black peppercorns using a mortar and pestle or spice grinder. Set aside.
- Heat the oil: In a large pan or wok, heat 2 tablespoons of cooking oil over medium heat.
- Sauté the aromatics: Add the chopped garlic, ginger, green chillies, lemongrass, crushed coriander seeds, and black peppercorns to the pan. Stir-fry for 2-3 minutes until fragrant.
- Add the vegetables: Add the chopped red bell pepper, mushrooms, and red onion to the pan. Stir-fry for 5-7 minutes until the vegetables begin to soften.
