Ingredients
- 100 G Jumbo Garlic 100g
- - Cathedral City Mature Cheddar Cheese
- - Budgen Mission 6 Tortillas Plain 368G
- 1 Kg Red Onion 1kg
- 1 Kg Wilton Wholefoods Black Beans 5kg
- 1 piece Yellow Bell Pepper
- 1 L Crisp N Dry Oil
- 100 G Trs Ground Cumin Jeera Powder
- 750 G Top-Op Table Salt Drums
- 100G Trs Chilli Powder 100G
Instructions
- 1. Preheat your oven to 200°C (180°C fan) or gas mark 6.
- 2. Prepare the vegetables: Dice the red onion, mince the garlic, and chop the yellow bell pepper and courgettes into small pieces.
- 3. Heat a large frying pan over medium heat and add a drizzle of Crisp N Dry Oil. Once hot, sauté the diced red onion and minced garlic for 2-3 minutes until fragrant.
- 4. Add the chopped yellow bell pepper and courgettes to the pan. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
- 5. Stir in the black beans, a pinch of Trs Ground Cumin Jeera Powder, a pinch of Chilli Powder Rajah (adjust to taste), and a pinch of Top-Op Table Salt Drums. Mix well and cook for another 2-3 minutes to combine the flavors.
- 6. Remove the pan from heat and set the vegetable and bean mixture aside.
- 7. Lightly grease a baking dish with Crisp N Dry Oil. Take one tortilla and spoon some of the vegetable and bean mixture into the center. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
- 8. Once all the tortillas are filled and placed in the baking dish, sprinkle the grated Cathedral City Mature Cheddar Cheese evenly over the top.
- 9. Bake the enchiladas in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbling.
- 10. While the enchiladas are baking, prepare the garnish: Roughly chop the Fresh Asian Coriander Bunch.
- 11. Once the enchiladas are done, remove them from the oven and let them cool for a few minutes. Sprinkle the chopped coriander over the top as a garnish.
