  • 6 Each Golden Yolk Eggs 6 Pack

Instructions

  1. 1. Wash and peel the potatoes, then slice them thinly into even rounds.
  2. 2. Peel and finely slice the onion.
  3. 3. Heat a generous amount of olive oil in a large non-stick frying pan over medium heat.
  4. 4. Add the sliced potatoes to the pan and cook gently for about 10 minutes, stirring occasionally, until they start to soften but do not brown.
  5. 5. Add the sliced onions to the pan with the potatoes and continue cooking for another 10 minutes, stirring occasionally, until both the potatoes and onions are tender.
  6. 6. While the potatoes and onions are cooking, crack the eggs into a large bowl and beat them well with a whisk or fork. Season with salt and pepper to taste.
  7. 7. Once the potatoes and onions are cooked, use a slotted spoon to transfer them into the bowl with the beaten eggs. Mix gently to combine, ensuring the potatoes and onions are evenly coated with the egg mixture.
