Instructions
- 1. Cook the basmati rice according to package instructions, then set aside and keep warm.
- 2. Mix smoked paprika, ground cumin, chili powder, salt, and black pepper in a small bowl. Rub this spice blend evenly onto the chicken breasts.
- 3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Cook the chicken breasts for 5-7 minutes on each side until golden brown and fully cooked (internal temperature of 75°C). Remove from the skillet and let rest for 5 minutes before slicing into strips.
- 4. In the same skillet, add the remaining tablespoon of vegetable oil and sauté the diced red and green bell peppers for 3-4 minutes. Add the sweet corn kernels and cook for another 2 minutes until slightly charred and tender.
- 5. Reduce the heat to low and stir the shredded cheddar cheese into the cooked rice until completely melted and creamy.
- 6. Assemble the bowls by dividing the queso rice among serving dishes. Top with sliced chicken, sautéed vegetables, and a drizzle of lime juice for a zesty finish.
