Instructions

  1. 1. Cook the basmati rice according to package instructions, then set aside and keep warm.
  2. 2. Mix smoked paprika, ground cumin, chili powder, salt, and black pepper in a small bowl. Rub this spice blend evenly onto the chicken breasts.
  3. 3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Cook the chicken breasts for 5-7 minutes on each side until golden brown and fully cooked (internal temperature of 75°C). Remove from the skillet and let rest for 5 minutes before slicing into strips.
  4. 4. In the same skillet, add the remaining tablespoon of vegetable oil and sauté the diced red and green bell peppers for 3-4 minutes. Add the sweet corn kernels and cook for another 2 minutes until slightly charred and tender.
  5. 5. Reduce the heat to low and stir the shredded cheddar cheese into the cooked rice until completely melted and creamy.
