Ingredients

  • 1 Bunch Coriander - Bunch
  • 500G Strong Roots Oven Baked Sweet Potato Fries
  • 100 G Trs Kashmiri Chilli Powder Deggi Mirch 100g
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • NaN Filippo Berio Classico Pure Olive Oil
  • 640G Birds Eye Supersweet Sweetcorn
  • 250 Ml Mr Organic Lime Juice
  • 400G Petti 100% Italian Chopped Tomatoes
  • 750 G Top-Op Table Salt Drums
  • - Longley Farm Freshly Soured Cream
  • 100G East End Cumin Whole Seeds
  • 430G Gran Luchito Cantina Black Beans
  • 1 Lime - 1 Each

Instructions

  1. 1. Preheat the oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. 2. Arrange the Strong Roots Oven Baked Sweet Potato Fries on the prepared baking sheet. Bake for about 30-40 minutes, or until tender and easily pierced with a fork.
  3. 3. While the sweet potatoes are baking, finely chop the Fresh Onion Pack and Petti 100% Italian Chopped Tomatoes.
  4. 4. Heat a large skillet over medium heat and add a drizzle of Olive Oil – Organic.
  5. 5. Add the chopped onions to the skillet and sauté until translucent, about 3-5 minutes.
  6. 6. Stir in the Petti 100% Italian Chopped Tomatoes and cook for another 2-3 minutes.
  7. 7. Add the Gran Luchito Cantina Black Beans and Natco Popping Corn to the skillet. Stir well to combine.
  8. 8. Season the mixture with East End Cumin Whole Seeds, Trs Kashmiri Chilli Powder Deggi Mirch, and a pinch of Top-Op Table Salt Drums. Adjust seasoning to taste.
  9. 9. Squeeze Mr Organic Lime Juice over the mixture and stir to combine. Let the mixture cook for 5-10 minutes to allow the flavors to meld.
  10. 10. Once the sweet potato fries are done baking, remove them from the oven and let them cool slightly.
  11. 11. Carefully scoop out a small amount of flesh from each sweet potato fry to create a well for the filling.
  12. 12. Fill each sweet potato boat with the black bean and corn mixture.
  13. 13. Top each filled sweet potato boat with a dollop of Longley Farm Freshly Soured Cream.
  14. 14. Garnish with finely chopped Natoora Fresh Italian Flat Leaf Parsley.
