Ingredients

  • 500 G Elite Double Roasted Rava Semolina
  • 300G Shana Shredded Coconut
  • 110G Ginni'S Almonds Dry Roasted 110g
  • 300G Natco Cashews, 300G
  • 200G Anchor Unsalted Butter
  • - Silver Spoon Icing Sugar
  • 750 G Top-Op Table Salt Drums
  • 50G Ground Cardamom, 50G

Instructions

  1. 1. In a pan, heat 1 cup of water along with 1/4 tsp of table salt and 1 tbsp of icing sugar. Bring the mixture to a boil.
  2. 2. Gradually add 1 cup of double roasted rava semolina to the boiling water, stirring continuously to avoid lumps. Cook on low heat until the mixture thickens and forms a dough-like consistency.
  3. 3. Remove the pan from heat and let the semolina dough cool slightly. Knead it gently with greased hands to make it smooth.
  4. 4. Divide the dough into small equal portions and shape them into flat discs or oval pithas (dumplings).
  5. 5. Prepare the stuffing by mixing 1/4 cup of shredded coconut, 2 tbsp of icing sugar, and 1/4 tsp of ground cardamom in a bowl.
  6. 6. Flatten each semolina disc and place a small amount of the coconut stuffing in the center. Fold and seal the edges carefully to encase the filling.
  7. 7. Steam the prepared pithas in a steamer or idli cooker for 10-12 minutes until they are cooked through and firm.
  8. 8. Remove the pithas from the steamer and let them cool slightly. Serve warm or at room temperature.
