  • 50G Pepper Black Ground BWFO
  • 160 Ml Cj Bibigo Sesame Oil
  • 1 Bunch Spring Onions 1 Bunch
  • 30G Shiitake Mushrooms, 30G
  • NaN Fresh Halal Chicken Leg Meat Skinless & Boneless
  • 450G Rose Rice Flour, 450G
  • 1 Kg White Granulated Sugar
  • - Amoy Dark Soy Sauce
  • 750 G Top-Op Table Salt Drums
  • 190G Natco Garlic & Ginger Paste, 190G

Instructions

  1. 1. Prepare the Dough: In a bowl, dissolve a sachet of dried yeast with a cup of warm water and a pinch of sugar. Let it sit for about 10 minutes until it becomes frothy. In another large bowl, mix 2 cups of cakes & pastry flour, a pinch of salt, and the yeast mixture. Knead the mixture into a smooth dough and let it rise in a warm place for about 1 hour or until it doubles in size.
  2. 2. Prepare the Filling: Debone and finely chop the chicken wings. In a bowl, combine the chopped chicken with 2 tablespoons of dark soy sauce, 1 tablespoon of sesame oil, 1 teaspoon of black pepper powder, 2 tablespoons of rice flour, 2 cloves of minced garlic, a tablespoon of garlic & ginger paste, sliced mushrooms, and chopped spring onions. Mix everything well and let it marinate for 30 minutes.
  3. 3. Assemble the Baozi: Once the dough has risen, punch it down and knead it briefly. Divide the dough into small equal portions and roll each one into a circle. Place a spoonful of the chicken filling in the center of each dough circle. Bring the edges of the dough up and pleat them together to enclose the filling, pinching tightly at the top.
  4. 4. Steam the Baozi: Place a parchment paper piece under each baozi to prevent sticking, and arrange them in a steamer with some space in between. Cover with a lid and steam over high heat for about 15-20 minutes until the dough is cooked through and the baozi is fluffy.
