Ingredients

  • 750 G Top-Op Table Salt Drums
  • 50G Pepper Black Ground BWFO
  • 1 Ltr Ktc Sunflower Oil
  • - Lurpak Unsalted Butter
  • 250 G Onion Shallots 300g
  • 100 G Jumbo Garlic 100g
  • 158G Savoury Mushrooms, 158G
  • - Kerrymaid UHT Whipping Cream
  • - Schwartz Flat Leaf Parsley

Instructions

  1. 1. Take the skillet out of the fridge 30 minutes before cooking to bring it to room temperature for even cooking.
  2. 2. Season generously with salt and black pepper.
  3. 3. Heat 2 tablespoons of vegetable oil in a heavy-bottomed skillet over medium-high heat.
  4. 4. Once the oil is shimmering, sear for 2-3 minutes on each side for medium-rare (adjust cooking time for desired doneness). Remove from the pan and let rest on a plate, loosely covered with foil.
  5. 5. Lower the heat to medium and add 1 tablespoon of butter to the skillet. Once melted, add the finely chopped shallots and cook for 2-3 minutes until softened.
  6. 6. Add the minced garlic to the pan and cook for another 1 minute until fragrant.
  7. 7. Stir in the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they release their moisture and become golden brown.
  8. 8. Deglaze the pan with a splash of water, scraping up any browned bits from the bottom. Let the water reduce for 2 minutes.
  9. 9. Add the double cream to the pan and stir well to combine. Simmer the sauce for 5 minutes until it thickens slightly.
  10. 10. Adjust seasoning with salt and pepper, then stir in the chopped parsley for a fresh finish.
  11. 11. Serve on plates, spoon the mushroom cream sauce generously over the top, and garnish with additional parsley if desired.
