- 750 G Top-Op Table Salt Drums
- 50G Pepper Black Ground BWFO
- 1 Ltr Ktc Sunflower Oil
- - Lurpak Unsalted Butter
- 250 G Onion Shallots 300g
- 100 G Jumbo Garlic 100g
- 158G Savoury Mushrooms, 158G
- - Kerrymaid UHT Whipping Cream
- - Schwartz Flat Leaf Parsley
Instructions
- 1. Take the skillet out of the fridge 30 minutes before cooking to bring it to room temperature for even cooking.
- 2. Season generously with salt and black pepper.
- 3. Heat 2 tablespoons of vegetable oil in a heavy-bottomed skillet over medium-high heat.
- 4. Once the oil is shimmering, sear for 2-3 minutes on each side for medium-rare (adjust cooking time for desired doneness). Remove from the pan and let rest on a plate, loosely covered with foil.
- 5. Lower the heat to medium and add 1 tablespoon of butter to the skillet. Once melted, add the finely chopped shallots and cook for 2-3 minutes until softened.
- 6. Add the minced garlic to the pan and cook for another 1 minute until fragrant.
- 7. Stir in the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they release their moisture and become golden brown.
- 8. Deglaze the pan with a splash of water, scraping up any browned bits from the bottom. Let the water reduce for 2 minutes.
- 9. Add the double cream to the pan and stir well to combine. Simmer the sauce for 5 minutes until it thickens slightly.
- 10. Adjust seasoning with salt and pepper, then stir in the chopped parsley for a fresh finish.
- 11. Serve on plates, spoon the mushroom cream sauce generously over the top, and garnish with additional parsley if desired.
