- Pack Tray Of 30 Medium Free Range Eggs
- - Ktc Vegetable Oil
- 1 L Ktc Sunflower Oil
- 1.5 Kg Best In Plain Flour 1.5 Kg
- 1 Kg Trade Aid Caster Sugar 1kg
- 100G Natco Paprika Powder 100g
- 227G Paxo Golden Breadcrumbs

Instructions
- 1. Heat 4 1/4 cups vegetable oil in a large pan to 325°F. Fry the potato slices in batches for 5-6 minutes, then remove and set aside. Keep the oil warm.
- 2. For the sauce, heat 1 tbsp sunflower oil in a saucepan, add the diced red bell pepper and half the diced onion, and sauté for 4-5 minutes. Stir in the tomato puree and sauté for 1-2 minutes, then sprinkle over 1 1/2 tbsp flour. Gradually pour in the vegetable stock, bring to a boil, and simmer, stirring, for 4-5 minutes. Stir in half the oregano, the caster sugar, and season with salt and pepper. Set aside and keep warm.
- 3. Mix the diced red bell pepper, paprika, remaining diced onion, mustard, egg, breadcrumbs, and a little water together in a bowl. Season with salt and pepper. Shape the mixture into 4 portions.
- 4. Heat 2 tbsp sunflower oil in a frying pan over medium heat. Add the portions and fry for 8-9 minutes, turning halfway through, until golden and heated through.
- 5. Fry the potatoes once more in the hot oil for 3-4 minutes until crispy. Do this in batches and remove using a slotted spoon. Sprinkle the finished fries with salt and pepper.
- 6. Dust 1 tbsp flour over the sliced onion, then add to the hot oil after the fries. Fry for 1-2 minutes until golden and crispy. Remove and drain on paper towels.
- 7. To serve, divide the tomato sauce evenly and top with a portion. Serve the crispy fries on the side and garnish with the fried onion rings.
