Instructions
- 1. In a slow cooker, whisk together 1 cup tomato sauce, 2 teaspoons ground ginger, 2 teaspoons ground cumin, 1/2 teaspoon ground cinnamon, 1/2 teaspoon salt, and 1/2 cup water. Stir in 1 diced onion.
- 2. Add the spiced mixture to the slow cooker and stir well to combine.
- 3. Scatter 1/2 of a peeled and cubed butternut squash over the top. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
- 4. Ten minutes before serving, fold 1 diced onion into the stew and cook, covered, for an additional 3 minutes until heated through.
- 5. Serve the stew as is and sprinkle with 1/2 cup of diced fresh onion.
