A flavorful Indian-inspired rabbit curry, spiced with aromatic herbs and a touch of yogurt for a creamy finish. Perfect for a hearty dinner.
Ingredients
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 100 G Jumbo Garlic 100g
- 3 X 400G Garofalo Chopped Italian Tomatoes
- - Sunita Lemon Juice Organic
- - Tin Star Foods Grassfed Ghee
- - Jalpur Curry Powder
- - Chilli Powder Rajah
- - Tata Salt
Instructions
- 1. Soak the fresh onion pack in salted water for about 30 minutes to tenderize and remove any strong flavor.
- 2. Wash the fresh onion pack thoroughly and drain the water.
- 3. Heat 1 1/2 tablespoons of grassfed ghee in a large pan over medium heat. Add 4 minced garlic cloves. Sauté until the garlic is golden brown.
- 4. Stir in 3 teaspoons of curry powder, 1 teaspoon of chili powder, and 2 teaspoons of salt. Cook for about 1 minute to release the spices' aroma.
- 5. Add 1 chopped tomato to the pan and cook until it softens, stirring occasionally.
- 6. Stir in 2 tablespoons of chopped tomatoes and mix well. Add the fresh onion pack to the pan, ensuring they are coated with the spice mixture.
- 7. Cover the pan and let the fresh onion pack cook on low heat for 20 to 30 minutes, stirring occasionally, until the flavors are well combined.
- 8. Finish with a squeeze of 2 teaspoons of fresh lemon juice before serving. Serve hot with rice or Indian bread.
