Ingredients

- 100 G Jumbo Garlic 100g
- - Ginger - 100g
- - Sweet Potatoes
- 400G Casa Marrazzo Peeled Organic Tomatoes, 400G
- - Rajah Whole Red Chillies
- - Ktc Vegetable Oil
- 100 G Rajah Garam Masala
- 400 g Trs Turmeric Powder 400G
- 2 Kg Natco Red Lentils (Masoor Dal) 2 Kg
- - Potts Vegetable Stock Can
- 1 Kg Coarse Sea Salt, 1Kg
- 500G Cracked Black Pepper Catering Size, 500G
- 1 L Ktc Sunflower Oil
Instructions
- 1. Process 1 onion, 3 cloves of garlic, 1-inch piece of fresh ginger, and 1 long red chili pepper with 1 tablespoon of water in a food processor until smooth.
- 2. Heat 1 tablespoon of vegetable oil in a large saucepan over medium heat. Add the onion mixture and cook, stirring, for 3-4 minutes until fragrant.
- 3. Add 1 sweet potato (peeled and diced), 3 tomatoes (chopped), 1 teaspoon garam masala, and 1 teaspoon ground turmeric to the pan. Stir well to coat the vegetables in the spices.
- 4. Stir in 1/2 cup red lentils and 2 cups vegetable stock. Bring the mixture to a boil, then reduce the heat to low and simmer for 25-30 minutes, stirring occasionally, until the lentils are tender and the sauce has thickened.
- 5. Preheat the oven to 350°F. Brush a small amount of sunflower oil onto a baking dish, sprinkle with sea salt and cracked black pepper, and bake the diced sweet potatoes for 6-8 minutes, or until lightly golden.
- 6. Serve the spiced lentil mixture with the baked sweet potatoes for a complete meal.
