Ingredients
- 500G Ghee, 500G
- 750 G Top-Op Table Salt Drums
- 1.5 Kg Matthews Cotswold Organic Plain Flour, 1.5Kg
- 500G Tate & Lyle Fairtrade Fondant Icing Sugar
Instructions
- 1. In a mixing bowl, combine 1 cup of organic plain flour, 1/4 cup of fondant icing sugar, and a pinch of salt. Mix well.
- 2. Add 2 tbsp of melted ghee to the dry ingredients and rub it into the flour until the mixture resembles breadcrumbs.
- 3. Gradually add 1/4 cup of milk, little by little, and knead into a firm, smooth dough. Cover the dough and let it rest for 15 minutes.
- 4. Divide the dough into two portions and roll out each portion into a thick sheet, about 1/4 inch thick.
- 5. Using a knife or a pizza cutter, cut the rolled dough into small diamond or square shapes.
- 6. Heat cooking oil in a deep pan on medium heat. Once hot, carefully drop the cut pieces into the oil in small batches.
- 7. Fry the shankarpali on medium-low heat, stirring occasionally, until they turn golden brown and crisp. This may take 5-7 minutes per batch.
- 8. Remove the fried shankarpali using a slotted spoon and drain on a paper towel to remove excess oil. Repeat with the remaining dough.
- 9. Allow the shankarpali to cool completely before storing in an airtight container. Serve as a snack with tea or coffee.
