Instructions
- 1. Preheat the oven to 190°C (375°F). Grease a medium-sized baking dish with olive oil.
- 2. Chop the cherry tomatoes, button mushrooms, bell peppers, zucchini, and spinach leaves into bite-sized pieces.
- 3. Heat 1 tbsp olive oil in a frying pan over medium heat, add the garlic, and sauté for 1 minute. Stir in the chopped vegetables and cook for 5-7 minutes until slightly softened.
- 4. Season the vegetables with smoked paprika, dried thyme, chili flakes, salt, and black pepper, mixing well to coat evenly.
- 5. Arrange the crumpets in the baking dish, spacing them apart. Spoon the sautéed vegetables evenly over the crumpets.
