Instructions

  1. 1. Remove the skin from 1 1/2 lb chicken breast and cut it into bite-sized pieces.
  2. 2. Heat 2 tbsp butter in a large skillet over medium heat. Add 3/4 cup diced onion, 1/2 cup sliced green pepper, and 1/2 cup sliced red pepper. Sauté until the vegetables are soft, about 5-7 minutes.
  3. 3. In a shallow dish, coat the chicken pieces with 1/2 cup flour, ensuring they are evenly covered.
  4. 4. Season the chicken with 1 tsp salt and 1/2 tsp ground black pepper. Add the chicken to the skillet with the vegetables and cook, stirring frequently, for 5 minutes until the chicken begins to brown.
  5. 5. Stir in 1 cup ketchup and 1 1/2 tbsp sugar. Add 1/2 cup water and mix well to combine.
  6. 6. Reduce the heat to low, cover the skillet, and let the mixture simmer for 30 minutes, stirring occasionally to prevent sticking.
  7. 7. Serve the chicken stir-fry hot over cooked white rice for a complete meal.
