Instructions
- 1. Remove the skin from 1 1/2 lb chicken breast and cut it into bite-sized pieces.
- 2. Heat 2 tbsp butter in a large skillet over medium heat. Add 3/4 cup diced onion, 1/2 cup sliced green pepper, and 1/2 cup sliced red pepper. Sauté until the vegetables are soft, about 5-7 minutes.
- 3. In a shallow dish, coat the chicken pieces with 1/2 cup flour, ensuring they are evenly covered.
- 4. Season the chicken with 1 tsp salt and 1/2 tsp ground black pepper. Add the chicken to the skillet with the vegetables and cook, stirring frequently, for 5 minutes until the chicken begins to brown.
- 5. Stir in 1 cup ketchup and 1 1/2 tbsp sugar. Add 1/2 cup water and mix well to combine.
- 6. Reduce the heat to low, cover the skillet, and let the mixture simmer for 30 minutes, stirring occasionally to prevent sticking.
- 7. Serve the chicken stir-fry hot over cooked white rice for a complete meal.
