Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Melt 2 tablespoons of butter in a large skillet over medium-high heat.
  3. 3. Add 3 thinly sliced white onions and 8 ounces of sliced fresh mushrooms to the skillet. Sauté until tender, about 8-10 minutes.
  4. 4. Transfer the sautéed onions and mushrooms to a 12 x 7 1/2 x 2-inch baking dish or a 2-quart casserole dish.
  5. 5. Sprinkle 1 cup of shredded gruyere cheese evenly over the onion and mushroom mixture.
  6. 6. In a mixing bowl, combine 1 can of condensed cream of mushroom soup, 1 can of almond milk (use the empty soup can for measurement), and 2 teaspoons of soy sauce. Mix until smooth.
