Ingredients
- 125G Daylesford Organic Brandy Butter
- 1 Kg Yellow/White Onion 1kg
- 1 stick Organic Celery Stick
- - Oxo Chicken Stock Cubes
- - Cawston Press Pressed Tomato Juice
- - Forest Whole Foods Organic White Quinoa
- 250G Tilda Wild Rice
- 1.5 Kg Best In Plain Flour 1.5 Kg
- 290G Portland Mills Jamaican Curry Powder, 290G
- - Tata Salt
- - Kikkoman Soy Sauce
Instructions
- 1. Melt 4 tbsp of butter in a large pan over medium heat. Add 1/2 cup of diced onion and 1/2 cup of diced celery, and sauté until softened, about 5 minutes.
- 2. Stir in 1/2 cup of flour and cook for 1-2 minutes, stirring constantly, to form a roux.
- 3. Gradually add 4 cups of chicken stock, whisking continuously to avoid lumps. Cook until the mixture thickens and becomes smooth, about 5 minutes.
- 4. Stir in 1 cup of tomato juice, 1 tsp of curry powder, 1/2 tsp of Worcestershire sauce, and 1 tsp of salt. Mix well to combine.
- 5. Add 2 cups of cooked, shredded chicken to the pan. Simmer the mixture for 10 minutes, allowing the flavors to meld and the chicken to heat through.
- 6. Meanwhile, prepare 4 cups of cooked rice and arrange it in a ring on a serving platter.
- 7. Pour the hot curried chicken mixture into the center of the rice ring. Serve immediately and enjoy.
