Instructions

  1. 1. Preheat your oven to 180°C (350°F). Season the pork shoulder with salt, black pepper, and Dijon mustard, ensuring it is evenly coated.
  2. 2. Heat 1 tablespoon of olive oil in a large ovenproof skillet over medium-high heat. Sear the pork shoulder on all sides until golden brown, approximately 2-3 minutes per side.
  3. 3. Transfer the skillet to the preheated oven and roast the pork for 45-60 minutes, or until the internal temperature reaches 70°C (160°F). Allow the pork to rest for 10 minutes after roasting.
  4. 4. While the pork is roasting, prepare the salsa verde. Finely chop the parsley, chives, and dill, and place them in a mixing bowl.
  5. 5. Add the capers, white wine vinegar, sugar, chopped chili, lemon zest, and juice to the bowl. Stir in the remaining tablespoon of olive oil and mix until well combined.
