Instructions
- 1. Preheat your oven to 180°C (350°F). Season the pork shoulder with salt, black pepper, and Dijon mustard, ensuring it is evenly coated.
- 2. Heat 1 tablespoon of olive oil in a large ovenproof skillet over medium-high heat. Sear the pork shoulder on all sides until golden brown, approximately 2-3 minutes per side.
- 3. Transfer the skillet to the preheated oven and roast the pork for 45-60 minutes, or until the internal temperature reaches 70°C (160°F). Allow the pork to rest for 10 minutes after roasting.
- 4. While the pork is roasting, prepare the salsa verde. Finely chop the parsley, chives, and dill, and place them in a mixing bowl.
- 5. Add the capers, white wine vinegar, sugar, chopped chili, lemon zest, and juice to the bowl. Stir in the remaining tablespoon of olive oil and mix until well combined.
- 6. Slice the rested pork and arrange on a serving plate. Generously spoon the salsa verde over the pork slices.
