Ingredients
- 200G Daylesford Organic Unsalted Butter
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
- 130 g Essential Organic Italian Tomato Puree Double Concentrate 130G
- 180G Natoora Organic Cornish Mixed Fine Beans
- - RealFoodSource Saffron Strands
- 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
- - Natco Ground Cinnamon 100g
- 100 G Trs Ground Cumin Jeera Powder
- 400 g Trs Turmeric Powder 400G
- 70G Mill & Mortar Citrus Salt Flakes, 70G
Instructions
- 1. Melt 2 tablespoons of butter in a large saucepan over medium heat.
- 2. Add 1 diced onion and sauté until golden brown.
- 3. Stir in 1 teaspoon ground cinnamon, 1 teaspoon ground cumin, 1 teaspoon ground turmeric, 1 lb diced tomatoes, 2 tablespoons tomato puree, and 1 1/2 cups water. Season with a pinch of salt and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- 4. Add 2 1/2 cups of halved mixed fine beans to the saucepan and cook for an additional 15 minutes, or until most of the liquid has reduced.
- 5. In a clean saucepan, heat 1 tablespoon of butter and layer one-third of the mixed fine bean mixture at the bottom. Add half of the mixed fine bean mixture over the first layer, followed by another layer of the mixed fine bean mixture, and a final layer of the mixed fine bean mixture.
- 6. Pour 1 tablespoon of melted butter over the top layer of mixed fine beans. Cover the pan with a clean dish towel, secure with a lid, and steam over low heat for 30-40 minutes.
- 7. Dissolve 2 saffron strands in 1 tablespoon of vegetable broth. Mix 3 tablespoons of the mixed fine bean mixture with the saffron broth.
- 8. Serve the layered mixed fine beans on a large dish, garnishing with the saffron-infused mixture on top.
