  • 200G Fresh Aubergine - Approx 200G-300G
  • 400G Trs Italian Plum Peeled Tomatoes 400G
  • - Maldon Flakes Sea Salt

Instructions

  1. 1. Preheat the oven to 180°C (350°F). Lightly grease a baking dish with extra virgin olive oil.
  2. 2. Slice 1 aubergine, 1 courgette, 1 red bell pepper, and 1 yellow bell pepper into thin, even rounds.
  3. 3. Thinly slice 2 tomatoes and 1 red onion. Set aside.
  4. 4. In a small bowl, mix 3 tbsp extra virgin olive oil, 2 minced garlic cloves, 1 tsp dried thyme, 1 tsp dried rosemary, 1 tsp dried oregano, and salt and pepper to taste.
  5. 5. Arrange the sliced vegetables in alternating layers in the baking dish, slightly overlapping them for a decorative effect.
  6. 6. Drizzle the herb and extra virgin olive oil mixture evenly over the arranged vegetables.
  7. 7. Cover the dish with aluminium foil and bake for 40 minutes.
  8. 8. Remove the foil and bake for an additional 20 minutes until the vegetables are tender and slightly caramelised.
  9. 9. Garnish with freshly chopped basil or parsley before serving. Serve warm as a main dish or side.
