  • 100 G Natco Coriander Ground
  • 500 G Ktc Pure Butter Ghee
  • 450G Rachel'S Organic Low Fat Greek Style Natural Yogurt
  • 100G Green Chillies - 100g
  • - Vandevi Asafoetida 50g
  • 100 G Rajah Garam Masala
  • - Chilli Powder Rajah
  • 100 G Saras Turmeric Haldi Powder
  • - Sapna Ginger Garlic Paste 1kg
  • 1 L Crisp N Dry Oil
  • 1 Kg Heera Maida Flour,1kg
  • 750 G Top-Op Table Salt Drums
  • - Jalpur Fennel Seeds Whole

Instructions

  1. 1. In a mixing bowl, combine flour and a pinch of salt. Gradually add butter and mix until the flour resembles breadcrumbs. Add water little by little to knead into a smooth dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
  2. 2. Heat cooking oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. 3. Add finely chopped onions to the pan and sauté until golden brown.
  4. 4. Stir in ginger garlic paste and cook for 1-2 minutes until the raw aroma disappears.
  5. 5. Add turmeric powder, chili powder, coriander powder, and garam masala to the pan. Mix well and cook for another 2 minutes.
  6. 6. Add coriander leaves to the mixture for added flavor. Stir well and remove the filling from heat. Let it cool completely.
  7. 7. Divide the rested dough into small equal portions and roll each portion into a ball. Flatten each ball into a small disc.
  8. 8. Place a spoonful of the cooled onion filling in the center of each disc. Carefully fold the edges to seal the filling and shape into a round kachori.
  9. 9. Heat cooking oil in a deep frying pan over medium heat. Once the oil is hot, gently slide the kachoris into the oil and fry until golden brown and crispy on all sides.
  10. 10. Remove the kachoris from the oil and place them on a paper towel to drain excess oil. Serve hot with chutney or yogurt.
