- 1 Kg Trs Chana Dal
- 200G Anchor Unsalted Butter
- 1 L Ktc Sunflower Oil

- 750 G Top-Op Table Salt Drums
- 1.5 Kg Bacheldre Organic Stoneground Strong Wholemeal Flour, 1.5Kg
Instructions
- 1. Wash 1 cup of chana dal thoroughly and pressure cook it with water and a pinch of salt until soft. This should take about 3-4 whistles.
- 2. Once cooked, drain any excess water from the chana dal and mash it to form a smooth mixture.
- 3. In a pan, add the mashed chana dal, a jaggery slab (about 1 cup), a pinch of cardamom powder, and a pinch of nutmeg powder, and cook on medium heat until the mixture thickens and starts to leave the sides of the pan. This is your puran filling.
- 4. Let the puran filling cool down completely.
- 5. In another bowl, mix Bacheldre Organic Stoneground Strong Wholemeal Flour, a pinch of salt, and 1 tablespoon sunflower oil, gradually adding water to form a smooth, soft dough. Let it rest for about 15 minutes.
- 6. Divide the dough and the puran filling into equal portions.
- 7. Roll each dough portion into a small disc; place a portion of puran filling in the center, close the edges, and roll it out gently into a flat circle.
- 8. Heat a tawa or skillet over medium heat and cook the rolled puran poli on both sides, using a little unsalted butter for greasing, until golden brown.
- 9. Serve hot with a dollop of unsalted butter or a side of milk.
