Instructions
- 1. Preheat your oven to 180°C (350°F) and lightly grease a standard loaf tin with olive oil.
- 2. In a large mixing bowl, combine the minced pork, breadcrumbs, grated onion, minced garlic, egg, smoked paprika, ground cumin, salt, and pepper. Mix thoroughly until well combined.
- 3. Transfer the pork mixture into the prepared loaf tin and press it down evenly, ensuring it is compact. Smooth the top with a spatula or spoon.
- 4. Cover the loaf tin with aluminum foil and bake in the preheated oven for 40 minutes.
- 5. Meanwhile, prepare the harissa tomato sauce. Heat olive oil in a medium saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- 6. Stir in the harissa paste, canned tomatoes, tomato paste, honey, and a pinch of salt. Simmer for 10-12 minutes, stirring occasionally, until the sauce thickens and the flavors meld.
- 7. Remove the meatloaf from the oven after 40 minutes, discard the aluminum foil, and carefully drain any excess liquid from the tin.
- 8. Spoon the harissa tomato sauce generously over the top of the meatloaf, spreading it evenly. Return the meatloaf to the oven and bake uncovered for an additional 20 minutes.
- 9. Let the meatloaf rest for 5 minutes before slicing. Serve warm with a side of mashed potatoes or roasted vegetables for a complete meal.
