Instructions

  1. 1. Preheat your oven to 180°C (350°F) and lightly grease a standard loaf tin with olive oil.
  2. 2. In a large mixing bowl, combine the minced pork, breadcrumbs, grated onion, minced garlic, egg, smoked paprika, ground cumin, salt, and pepper. Mix thoroughly until well combined.
  3. 3. Transfer the pork mixture into the prepared loaf tin and press it down evenly, ensuring it is compact. Smooth the top with a spatula or spoon.
  4. 4. Cover the loaf tin with aluminum foil and bake in the preheated oven for 40 minutes.
  5. 5. Meanwhile, prepare the harissa tomato sauce. Heat olive oil in a medium saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  6. 6. Stir in the harissa paste, canned tomatoes, tomato paste, honey, and a pinch of salt. Simmer for 10-12 minutes, stirring occasionally, until the sauce thickens and the flavors meld.
  7. 7. Remove the meatloaf from the oven after 40 minutes, discard the aluminum foil, and carefully drain any excess liquid from the tin.
  8. 8. Spoon the harissa tomato sauce generously over the top of the meatloaf, spreading it evenly. Return the meatloaf to the oven and bake uncovered for an additional 20 minutes.
  9. 9. Let the meatloaf rest for 5 minutes before slicing. Serve warm with a side of mashed potatoes or roasted vegetables for a complete meal.
