Instructions

  1. 1. Preheat the oven to 180°C (350°F) and season the pork chops with salt and pepper on both sides.
  2. 2. Heat 2 tablespoons of olive oil in a large ovenproof skillet over medium-high heat. Add the pork chops and sear for 3 minutes per side until golden brown. Remove from the skillet and set aside.
  3. 3. Reduce the heat to medium and add 30g of unsalted butter to the skillet. Once melted, add the sliced onions and cook for 5 minutes, stirring occasionally, until softened and lightly caramelised.
  4. 4. Add the apple slices to the skillet and cook for another 3 minutes, stirring gently until the apples start to soften.
  5. 5. Sprinkle 1 tablespoon of plain flour over the onions and apples, and stir well to coat. Cook for 1 minute to remove the raw flour taste.
  6. 6. Gradually pour in 200ml of chicken stock and 100ml of apple cider, stirring constantly to create a smooth sauce. Bring the mixture to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
  7. 7. Return the pork chops to the skillet, nestling them into the sauce. Spoon some sauce over the chops to coat them.
  8. 8. Transfer the skillet to the preheated oven and bake for 10 minutes, or until the pork chops reach an internal temperature of 63°C (145°F).
  9. 9. Remove the skillet from the oven and let the pork chops rest for 5 minutes. Garnish with freshly chopped parsley before serving.
  10. 10. Serve the pork chops with their apple and onion pan sauce alongside mashed potatoes or roasted vegetables for a complete British family dinner.
