Instructions
- 1. Preheat the oven to 180°C (350°F) and season the pork chops with salt and pepper on both sides.
- 2. Heat 2 tablespoons of olive oil in a large ovenproof skillet over medium-high heat. Add the pork chops and sear for 3 minutes per side until golden brown. Remove from the skillet and set aside.
- 3. Reduce the heat to medium and add 30g of unsalted butter to the skillet. Once melted, add the sliced onions and cook for 5 minutes, stirring occasionally, until softened and lightly caramelised.
- 4. Add the apple slices to the skillet and cook for another 3 minutes, stirring gently until the apples start to soften.
- 5. Sprinkle 1 tablespoon of plain flour over the onions and apples, and stir well to coat. Cook for 1 minute to remove the raw flour taste.
- 6. Gradually pour in 200ml of chicken stock and 100ml of apple cider, stirring constantly to create a smooth sauce. Bring the mixture to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
- 7. Return the pork chops to the skillet, nestling them into the sauce. Spoon some sauce over the chops to coat them.
- 8. Transfer the skillet to the preheated oven and bake for 10 minutes, or until the pork chops reach an internal temperature of 63°C (145°F).
- 9. Remove the skillet from the oven and let the pork chops rest for 5 minutes. Garnish with freshly chopped parsley before serving.
- 10. Serve the pork chops with their apple and onion pan sauce alongside mashed potatoes or roasted vegetables for a complete British family dinner.
