Instructions
- 1. Preheat your oven to 200°C (180°C fan) and season the pork chops generously with salt, pepper, and a pinch of dried oregano on both sides.
- 2. Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat. Add the pork chops and sear for 2-3 minutes on each side until golden brown. Transfer the skillet to the oven and roast for 10 minutes or until the pork chops reach an internal temperature of 63°C. Remove from the oven and let rest under foil.
- 3. While the pork chops cook, heat 1 tbsp olive oil in a medium saucepan over medium heat. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
- 4. Add the drained and rinsed cannellini beans to the saucepan along with the chicken stock, rosemary sprig, and a pinch of salt and pepper. Simmer gently for 10 minutes, stirring occasionally.
- 5. Stir in the double cream and grated Parmesan cheese into the beans. Simmer for another 2-3 minutes until the mixture becomes creamy and thickens slightly. Remove the rosemary sprig and adjust seasoning to taste.
- 6. Plate the pork chops alongside the creamy white beans. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan. Serve immediately and enjoy!
