Instructions

  1. 1. Prepare the White Sauce: In a pan, melt 70 g of butter over medium heat. Add 70 g of flour and stir continuously until it turns light off-white and releases a nutty aroma (don’t brown it). Gradually pour in 1 litre of hot milk, whisking to avoid lumps. Cook on low flame for 7–8 minutes until thick and smooth. Season with salt and black pepper. Set aside.
  2. 2. Marinate the Prawns: In a bowl, combine 250 g of cooked peeled king prawns with salt, black pepper, finely chopped garlic, and peri peri seasoning rub. Marinate for 30 minutes.
  3. 3. Cook the Prawns: Heat 1 tbsp of cooking oil in a pan. Add the marinated prawns and sauté until they are 70% cooked — just until opaque and lightly golden. Remove from heat and set aside.
  4. 4. Prepare the Spaghetti Base: In a large pot, bring water to a boil and cook 500 g of spaghetti pasta according to package instructions. Drain and set aside. In the same pot, heat 30 ml of cooking oil. Add finely chopped garlic and sauté for 30 seconds. Add diced onion and green pepper, cooking until soft and lightly golden. Stir in the prepared white sauce and mix well.
  5. 5. Combine Ingredients: Add the cooked spaghetti to the pot and toss gently to coat in the sauce. Season with additional salt, black pepper, peri peri seasoning rub, and Kashmiri chilli powder to taste. Add the cooked prawns and mix everything gently.
  6. 6. Garnish and Serve: Plate the spaghetti hot and garnish with chopped parsley. Optionally, sprinkle grated cheese or zest from unwaxed lemons on top. Serve with garlic bread or a side salad for a complete meal.
